Yogurt parfait with stewed berries

If you have a busy morning and want an easy and quick meal on the go, that still is nourishing, this yoghurt parfait is a great alternativ. In here you have:

- Yoghurt (source to protein)

- Stewed berries (source to vitamins, minerals, antioxidants and fiber)

- Oats (source to carbohydrates and fiber)

- Seeds (source to healthy fats, protein and fiber)

Yogurt parfait with stewed berries


Stewed berries (4 servings)

- 1 1/2 cup (200g) frozen strawberries

- 1 1/2 cup (200g) frozen blackberries

Yogurt parfait (1 serving)

- 1/2 cup (125 ml) yoghurt

- 1/2 cup (50g) oats

- 4 tbsp stewed berries

- 1 tbsp pumpkin seeds


Stewed berries

  1. Add frozen straw- and blackberries to a pot on medium heat

  2. Cook until the berries are soft and have cooked down to a slightly thick sauce. Takes about 10-15 minutes.

Yogurt parfait

  1. In a bowl or jar add yogurt and stewed berries and swirl together.

  2. Add oats and top with pumpkin seeds.
