Chickpea dill spread



Ingredients

4 slices of whole grain bread

1 can chickpeas (240g), cooked

3 tbsp mayo (vegan if desired)

1/2 bell pepper, finely chopped

1/4 red onion, finely chopped

3 dill pickles (35g), finely chopped

2 tbsp fresh dill, chopped


Directions

  1. Mash chickpeas with a fork in a large bowl.

  2. Add dill pickles, bell pepper, red onion, mayo and dill and mix together.

  3. Serve on toast, on salad, in a wrap or as snack together with crackers. Enjoy!
