Loaded brekkie bowl
I love you berry much! To me juicy and sweet berries are like candy. Not only are they delicious, but also full of fiber, vitamins, minerals and antioxidants, which can do wonders for the body.
If you are not a fan of fruit or just want to change things up a bit, berries are a great way to get 1 of the recommended 5 servings of fruits and vegetables a day. They can be added in porridge bowls, smoothies, yogurt parfaits and even in salads, or just be enjoyed on their own. Which berry is your favorite?
Loaded brekkie bowl (2 serving)
Ingredients
1 cup (90g) rolled oats
1 cup (250ml) milk of choice (fortified with calcium)
1 cup water
Toppings (all optional)
2 handful raspberries
1/2 nectarine
1/2 apple
2 tsp nut butter
2 tbsp nut/seed mixture (flax-, pumpkin-, hemp seeds and almonds)
Directions
1. Add rolled oats, milk and water to a medium pot on high heat. Bring to a boil and reduce to medium heat while stirring on occasion. Let it simmer until it becomes thick and creamy, about 8 minutes.
2. When done remove from the heat. Add the toppings and enjoy!
