Coconut lentil dal
Comforting Red Lentil Dahl (2-3 serving)
Ingredients
Spices
1 tsp garam masala
1/2 tsp ground cumin
1/2 tsp turmeric powder
1/4 tsp paprika powder
1/4 tsp garlic powder
Salt to taste
Veggies
1 onion, chopped
1/2 cm fresh ginger (grated)
3 small/medium carrots, chopped
1/2 red chili, finely chopped
1/2 can (200g) coconut milk
1 cup vegetable broth
1 cup (200g) red lentils
Optional toppings: Spring onions, yogurt, sesame seeds, thinly sliced chili
Directions
Turn the stove on medium heat. When the frying pan is hot, add 2 tsp coconut milk. Add in onion and sauté for a couple of minutes until they are soft.
Add in grated ginger, chili and spices, and sauté for 1-2 minutes.
Then add in carrot, lentils, coconut milk and vegetable broth. Turn down to low/medium heat, and let it simmer until the lentils and veggies are cooked.
This can be served with rice or enjoyed on it´s own. Top it with yogurt, spring onions, thinly sliced chili and sesame seeds. Find a comfy place to sit and enjoy!
