Chickpea toast
Ingredients
1 tsp oil
1 can (240g) chickpeas
1/2 onion, finely chopped
1/4 chilli, finely chopped (optional)
1 clove garlic, crushed
2 mushrooms, chopped
1/2 red bell pepper, finely chopped
1/4 cup (1/2dl) coconut milk (can sub for water but will be a little less creamy and flavorful)
Spices
1 tbsp garam masala
1 tbsp curry powder
1/4 tsp turmeric
1/4 tsp paprika powder
1/4 tsp cumin
Optional toppings:
Fresh coriander
Chili flakes
Directions
Heat oil in a pan over medium-high heat. Add onions and garlic and sauté until soft and lightly brown, about 5 minutes. Add a splash of water as needed to deglaze the pan and prevent from burning.
Add mushrooms, chili and bell pepper and sauté for 3-4 minutes. Add chickpeas and all the spices and sauté for another 2 minutes.
Add coconut milk and let it cook to the chickpea mixture has thickened.
Serve it with a piece of toast, rice or another grain of choice. Garnish and enjoy!
