Carrot Sweet Potato Ginger Soup

Carrot Sweet Potato Ginger (serves 2-3)


1/2 onion, diced

400g sweet potato, cut in chunks

5g fresh ginger, grated

1 big carrot, cut in chunks

3dl (1 1/3 cup) water

1 1/2 dl (2/3 cup) Ful-fat Coconut milk

2 tbsp lime juice

Salt to taste

Toppings, optional

Swirl of coconut milk

Pumpkin seeds

Red chili flakes

Toasted bread


  1. Turn the stove on medium heat and add1 tbsp oil in a large saucepan. Add onions and sauté until lightly brown and soft, about 5 minutes. Add splashes of water as needed to deglaze the pan and prevent burning.

  2. Then add sweet potato, carrot and ginger to the pot and sauté for 4-5 minutes.

  3. Pour in water, coconut milk and lime juice. Bring everything to a boil, then reduce heat to low, and let it simmer for 15-20 minutes.

  4. Blend the soup with an immersion blender until creamy. Serve with a slice of bread and enjoy!
